Baby Blender Muffins

These definitely aren't the prettiest snacks but they are 100% toddler approved. So easy to grab and go, take in the car, pack in the diaper bag, etc. Emerson is addicted and I feel like super mom knowing that he's getting protein, fruit, and veggies in each of these little, unattractive, green muffins (they do taste great, I promise!).

You'll Need:

  • 1 cup of kale or spinach

  • 2 ripe bananas

  • 1/4 cup of coconut oil

  • 1 cup of gluten free oats

  • 1 cup of gluten free flour

  • 1/4 cup of pure maple syrup

  • 2/3 cup of non-dairy milk

  • 2 eggs (or flax eggs)

  • 1 tsp vanilla extract

Directions:

  • Throw all ingredients into a blender until fully combined and creamy.

  • Bake in a greased (or lined) muffin pan for 20 minutes at 350 degrees F.

  • Muffins will keep in the fridge for 3 days. Keep extra in the freezer.
